Problem was I was logged in as root and not as the site owner, so all the file ownership was wrong, and that's what caused the 500 error. I'm not sure I followed the directions accurately in terms of manually editing the .htaccess file (see below). Visit the Drupal.org forums, or join #drupal-support in IRC.
